is to support targeted research on the health protecting and therapeutic properties of all olive products, with the ultimate target to increase the nutritional and economic value of olive oil. To achieve this mission, WOCH certifies olive oils with a health claim, trains producers, organizes the annual Olympia Health and Nutrition Awards and accepts donations.

DIRECT QUALITY TEST OF OLIVE OIL BASED ON PHENOLS
WOCH enables everyone to self-certify olive oil quality by measuring the oil’s phenolic content with the unique, award-winning Aristoleo test. The Aristoleo test is a very simple colorimetric test that can be used by consumers, producers, olive millers and olive oil traders.

    Step 1
    Start with the Olive Predictor Test in order to estimate the right time to harvest your olives and produce olive oil ( optional step ).
    Send us a handful of green olives from your grove so we can predict the levels of phenols as well as the oil content in the olive oil you would produce if you harvested your olives at this time ( see instructions )
